Mince 2 slices of bacon for the burger mixture and chop the remaining 8 slices for the bacon jam. Dice the onion and mince the garlic.

In a bowl, combine ground venison, minced bacon, and SPG seasoning. Mix well and form into four ¼ lb burger balls. Set aside.

In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon but leave about 3–4 tbsp of bacon grease in the pan.

Add the diced onion to the skillet and sauté for about 2 minutes. Add the garlic and cook another minute.

Stir in brown sugar, maple syrup, and apple cider vinegar, then add the cooked bacon back to the pan. Mix well.

Season with black pepper and let the bacon jam cook on low heat, stirring occasionally until it
thickens.

Heat a skillet or griddle over medium-high heat. Add the burger balls and let them cook for about 1 minute before smashing them down.

Cook until about 75% done, flip, and add cheddar cheese. Let the cheese melt completely.

Toast the burger buns. Spread mayo on the bottom bun, add the venison smash burger, top with bacon jam, and serve.
